Butternut Squash & Red Lentil Pie

Ingredients
• 4 x medium-sized potatoes
• 2 x carrots peeled and chopped
• 1/4 butternut squash peeled and chopped
• 1/3 cup red lentils
• 1 1/2 cups of water
• 1 x dessert spoon of nutritional yeast
• 2 x teaspoons of coconut oil
• 1 x teaspoon of fresh/dried thyme
• A pinch of salt

Method
- Preheat oven to 180 degrees Celsius. You will need a small casserole dish for this recipe.
- Add the peeled, chopped potato to a saucepan, simmer until cooked, and drain.
- Add one dessert spoon of coconut oil to the cooked potato and mash, then set aside.
- Melt one dessert spoon of coconut oil in a saucepan and add the carrots and butternut squash, cooking on medium heat, stirring continuously for five minutes.
- Add the red lentils and the water with a pinch of salt and bring to a boil, then transfer the ingredients to a small casserole dish and cook in the oven for 30 minutes, stirring occasionally.
- Once the veggies and lentils are cooked thoroughly, remove them from the oven. Add the thyme and nutritional yeast and allow to cool.
- Pipe or smooth the mashed potato on top and serve.
- This delicious dish can be stored in a fridge for up to three days or frozen. Feed within two months. Remember to always introduce new ingredients into your dog’s diet slowly.
