Recipe: Delicious Protein Pancakes

Everyone loves pancakes, and with this healthy yet delicious recipe, you can enjoy them without the guilt. This quick and easy method creates a batch of pancakes perfect for breakfast, lunch or a tasty snack.
PROTEIN PANCAKES
Makes 4 Servings
INGREDIENTS:
1 cup Buckwheat flour
½ cup Almond flour
1½ cup Water
½ tsp Baking powder
3 tbsp Coconut sugar
1 tbsp Coconut oil
Berry compote:
2 cups Frozen or Fresh Berries
3 tbsp Maple Syrup
1 tbsp Water
METHOD
Mix buckwheat flour, almond flour, baking powder, coconut sugar and water. Put a little coconut oil into a frying pan, roll it around to cover the surface and heat until the pan is nice and hot. Pour the batter into the pan to make 3-4 circles and cook on medium heat. When bubbles appear on the surface and the base is golden turn the pancakes over and cook the other side. Repeat until all the batter is used. To make the compote boil frozen or fresh berries with water and syrup. Serve warm with compote and coconut yogurt.
