Best of British
Cottons Hotel and Spa
Knutsford-based Cottons Hotel and Spa has launched a brand-new brasserie menu to celebrate the very best of British produce. Paying homage to the hotel’s northern roots, guests will be able to indulge in classic British fare with a modern fine-dining twist. From duck leg hash served with a homemade brown sauce and a Clarence Court egg to head chef Sean Noonan’s signature dish, Pendle Hill lamb ‘hotpot’ served with potato terrine and red wine jus, there’s something to suit everyone’s taste.
Land and sea
Seaforth
Seaforth is a tranquil, beautifully British brasserie with a worldly exotic twist, inspired by Liverpool’s historical trade past. Menus have been created with global influences, offering guests colourful and inventive dishes that feature the very best of Liverpool’s connections to land and sea. The 50-cover restaurant is open from breakfast through to dinner, with menu highlights including beautiful dishes such as the chef’s signature scallion crusted cod of loin, served with braised bok choy, mango salsa, ginger and lotus root.
Water works
Crag
Doran Binder, the man behind the Crag brand, is a qualified water sommelier (yes, it’s really a thing!), who supplies exceptional quality spring water, bottled at source from a natural aquifier that runs 27 metres below ground, to consumers and hospitality venues. Doran also delivers informative and highly engaging water tasting sessions at the Crag Inn Water Bar at the foot of Shutlingsloe Hill. Crag is an environmentally conscious, socially responsible company that reuses all of its glass bottles as well as employing staff with learning disabilities via a local charity in order to give something back to the community.
